
A pale yellow of medium intensity with a fine bubble jet appearance. The aroma is medium intensity and citrusy fruity with light stone fruits, fresh citrus fruits and white flowers. A little note of toasted bread is added to the end of the aroma. The taste is dry, light and fruity. Ripe light stone fruits, yellow plums and white currants with fresh citrus and slightly chalky minerality. In addition to the creamy foam, the medium-length fruity aftertaste has a touch of toasted butter bread. The base wine is fermented in stainless steel barrels at 18 degrees Celsius, the second fermentation and autolysis in the bottle using the traditional method lasts 15 months. The history of Domaine B&B Bouché, the winery begins with Abel Bouché, a berry grower from the Champagne region. In 1920, he and his son Pierre decided to establish the Champagne Bouché winery. In 1987, Pierre's children, Bruno and Bernadette, were looking for new fields and found gardens with a suitable terroir in the south of France, the birthplace of sparkling wine, in the Limoux region. In 1992, the first B&B Bouché sparkling wine was produced. Since 2010, the fourth generation of the Bouché family, brothers Guillaume, Valentin and Paul Bouché, have been cultivating the 50ha plantations and managing the winery. Paul G. Valentin is the brothers' eponymous brand of sparkling wine.
