Le Grand Noir is a successful collaborative project of Les Celliers Jean D'Alibert, the first "flying winemaker" Hugh Ryman, wine critic & journalist Robert Joseph, and designer Kevin Shaw, of Les Celliers berry growers' cooperative in the Pépieux region of Minervois. Pale yellow in appearance with a fine bubble stream, medium intensity. The aroma is of medium intensity, fresh fruity and slightly floral, with hints of light stone fruits, fresh citrus fruits and white flowers. A little note of toasted bread is added to the end of the aroma. The taste is dry, light and fruity. Ripe light stone fruits, yellow plums and white currants with fresh citrus and slightly chalky minerality. In addition to the creamy foam, the medium-length fruity aftertaste has a touch of toasted butter bread. The berries are picked from 20-year-old vines in clay-limestone fields in the Limoux region. The base wine is fermented as berry varieties by controlling the temperature separately in stainless steel vats at 16 Co degrees, mixed together and the second fermentation and autolysis in the bottle using the traditional method lasts 12 - 15 months.
