Selección El Grajo Viejo (single vineyard) is the most exclusive wine of the Protos winery, with grapes from only one small vineyard. Vines were planted there more than 70 years ago. The grapes were all picked by hand, fermentation and maceration took place in large 500 liter French "fûtes" at a controlled temperature. Malolactic fermentation takes place in new Prantus oak barrels. The wine matured in French oak barrels for 18 months and then in bottles for 12 months before being released. The aroma is elegant and complex, the tone is set by ripe dark berries, spices, balsamic, toasted and mineral notes. The taste is powerful, with fine and elegant tannins. The aftertaste is pleasant and long. A wine with a long storage potential.
