Sauvignon Blanc grapes are sourced from carefully selected vineyards in the Languedoc region, located at higher altitudes and in cooler climates. The result was very aromatic grapes with excellent minerality. The grapes were picked mechanically at night to preserve the freshness of the berries. After picking the grapes, cold maceration took place, then the grapes were pressed into juice and fermentation began. The taste of the wine is fresh, with hints of lime and sage.
