François Protheau et Fils Chablis is an elegant dry white wine from the Chablis region of northern Burgundy, France. The wine made from 100% Chardonnay grapes expresses the minerality, freshness and balance characteristic of the region. The grapes come from the famous Kimmeridgian clay-limestone soils of the Chablis region, which contain oyster shell fossils millions of years old. It is this special soil that gives Chablis wines their characteristic mineral and fresh style. After gentle pneumatic pressing, temperature-controlled fermentation takes place in stainless steel tanks at a temperature of 16 °C. The wine is then aged for nine months in fine-line stainless steel tanks, which helps preserve the Chardonnay's freshness and bring out the pure minerality characteristic of the region. Aging in fine wine for nine months gives the wine a pleasant depth and silky texture in addition to its fruitiness. The wine has an open and expressive aroma, in which white fruits and the characteristic minerality of Chablis intertwine. A dry, fresh wine with good acidity. The balanced taste reveals white fruits, mineral nuances and a long lemony and refreshing aftertaste. Contains sulfites.
