
Pinot Noir grapes come from the foothills of the Pyrenees in the cooler climate of southern France, influenced by both Mediterranean and Atlantic winds. Fermentation took place over 2 weeks, during which the winemaker squeezed the maximum color and flavor out of the grapes. 10% of the wine was aged in oak barrels. Coq du Matin is a special and immediately enjoyable Pinot Noir, the flavor is dominated by cherry and raspberry, with hints of strawberry, pepper and oak in the background.
