A rich and concentrated ice wine made from Vidal Blanc, showing flavors of apricot, honey and tropical fruits balanced by fresh acidity. It is expensive due to extremely low yields, hand-harvesting of naturally frozen grapes at temperatures of at least -8°C, and the labor-intensive, high-risk production process. The grapes are left on the vine to freeze, then pressed while frozen to extract a highly concentrated sweet juice, which is fermented into wine.
