Vallformosa CAVA sparkling wines are made from 100% of the harvest of the company's own vineyards, and only the wort of the first press is used to make Cava. The fermentation of Vallformosa Origen Cava BIO Brut Reserva and BIO Brut Nature Reserva Cava' II in yeast vinegar lasts 20 months (the minimum rule stipulates 18 months). Reserva Cava's are elegant, silky, you can feel ripe yellow apples, creaminess, brioche, toasted almonds.
