In 1973, Jean Marc Brocard planted the first vines around the village of Perhy in the Chablis region, where he later built the Domaine Saint Clair winery next to the Saint Clair chapel. Since 1997, the winemaker has been Jean Marc's son Julien, who is a pioneer of organic and biodynamic berry growing in the Chablis region. The color is pale yellow with a greenish sheen. The aroma is subtle, minerally with fresh citrus acidity. There are yellow apples, light stone fruits, nectarines, seaweed with snail shells and the smell of wet stone and chalk. The taste is dry, medium-bodied and with bright citrus acid. Feel yellow apples, peaches, raw yellow plums and fresh nectarines with the bitterness of lemon peel. The aftertaste is long, mineral and with lively citrus acid. The grapes are grown organically and biodynamically by J.M. At the Sainte Claire winery owned by Brocard. The wine is malolactically fermented in large neutral oak barrels and aged for 2 months on lees (Sur lie). For storage in the wine cellar for 4 - 6 years, considering the year of picking the berries.
