Cabernet Sauvignon grapes are selected from low-yielding vines from the Carcassonne and Minervois regions. Grapes from two different regions went through fermentation separately and later they were mixed together to make one wine. Fermentation lasted for 2 weeks. Coq du Matin has rich blackcurrants, hints of vanilla and soft tannins.
