
The Pasqua Black Label series includes a selection of wines from the Veneto region characterized by the use of the appassimento technique. It is also a tribute to the first generation of the family, who produced the first bottles of Amarone and Ripasso wines in the 70s. The wine was made using Corvina, Rondinella, Corvinone and Negrara grapes, which were left to dry for 3 months after picking. During this time, the berries lost about 25-30% of their weight. After pressing in mid-January, alcoholic fermentation begins in steel barrels about 25-30 days at controlled temperature. Later, the wine matures in French oak barrels, where malolactic fermentation takes place, which gives the wine softness. The wine has a deep red color, the aroma is fresh and the tone is given by red berries, spices, chocolate and sweet notes of vanilla. The taste is warm, well balanced and with soft tannins.
