The musician Noëp had been dreaming of his own genie for a long time. Although very good gins are produced in Estonia, Noëp could not find a suitable combination of flavors that he liked - hence the decision to start making his own gin. The result is a mixture of the crispness of northern forests and the freshness of southern spices and citrus. Sünk is a premium small-batch gin in the style of London Dry, in which spruce and pine needles collected from Estonian forests are mixed with exotic plants, spices and herbs such as jackfruit root, bergamot bark, laurel and coffee lime. Before distillation, carefully selected plants, herbs and spices are soaked in domestic spirit for 72 hours, achieving a deep but soft taste and versatile aroma. Synki's production facilities in Tallinn's Krull quarter house a gin factory as well as a Noëp studio. So a piece of his music has always been stored in the gin.
