
A small grower-type champagne house owned by the Gonet family, which has grown grapes since 1830, and is today run by sister and brother, Chantal and Pierre Gonet. The champagne house was founded in 1910 in the village of Le Mesnil-sur-Oger. Today, a total of about 200,000 pdl of champagne is made from berries grown by the company in the fields of the 19ha Côte des Blancs, Côte de Sézanne and Aube growing areas. The color is pale yellow with a golden sheen. The aroma is fruity, lively and mineral. Feel ripe citrus fruits, chalk, seashells, white flowers with yellow apples and light stone fruits. At the end of the aroma, some sweet spices, butter bread and gingerbread are added, which are balanced by mineral citrus fruits. The taste is dry, light and minerally fruity. Smell ripe light stone fruit, chalk, nectarine, citrus and apple. The long, mineral aftertaste is complemented by a slightly spicy nuance of roasted fruit and yeast garden. The grapes are grown according to the principles of organic farming and from around the village of Le Mesnil-sur-Oger Grand Cru (Côte des Blancs). Only 30% of reserve wines are used in the base wine made from the first press, the wine is fermented in stainless steel barrels, develops for 6 months in a 600L oak barrel, and the second fermentation/autolysis in the bottle with yeast vinegar lasts for 4 years.
